Each event in this series offers guests a rare opportunity to savour gourmet dishes crafted by top chefs, who draw inspiration from their heritage, local ingredients, and innovative techniques.
Following the incredible success of our first Chef Series event, which featured renowned French chef Stéphane Delourme, we are thrilled to continue bringing these exceptional experiences to Killarney.

Our Festive Chef Series in aid of Brú Columbanus
Join us at The Brehon Hotel & Spa on Sunday, 1st December, from 2–5 PM for a very special event in aid of Brú Columbanus, a Cork charity that provides accommodation for those with loved ones in Cork hospitals. This event promises an afternoon filled with culinary inspiration, festive cheer, and a chance to give back during the holiday season. Guests will enjoy live cooking demonstrations by our Executive Chef Chad Byrne and Michelin chef, Rob Krawczyk, showcasing festive recipes and tips to elevate your Christmas meals. Rob is the owner of Restaurant Chestnut in Ballydehob, West Cork and has helf a Michelin star since 2019. From delectable appetisers to show-stopping festive dishes, this is a must-attend event for food lovers looking to add a unique twist to their holiday menus.
Adding to the festivities, KD Evans from The Wine Buff in Killarney will guide guests through a curated wine tasting, showcasing some of the finest selections to perfectly pair with your seasonal meals. It’s a wonderful opportunity to discover new favourites and learn about the art of wine pairing from a true expert. The afternoon wouldn’t be complete without festive canapés, lovingly prepared with the finest seasonal ingredients, providing a taste of the dishes being demonstrated.
All proceeds from the event will go to Brú Columbanus, a charity that provides much-needed accommodation for families of seriously ill patients in Cork hospitals.

Brehon meets Breton
Featuring Renowned Seafood Chef Stephane Delourme
Our first Chef Series: Brehon meets Breton took place in October 2024 under our stretch tent on the Brehon Lawn. Stephane Delourme, who has honed his craft over 25 years with Rick Stein in Cornwall, brought his signature passion for seafood and Celtic traditions to The Brehon. Guests were treated to a live seafood BBQ demonstration on a traditional ring grill using wooden coals, elevating the evening with an authentic and immersive cooking experience.
The Brehon Meets Breton menu began with welcome drinks and oysters, setting a sophisticated tone for the evening. Guests were treated to a selection of freshly cooked seafood dishes, each paired thoughtfully with a hand-selected glass of wine, provided by Classic Drinks Ireland. The menu featured fresh salads crafted with local produce, perfectly complementing the seafood’s rich flavours. Guests were served Kenmare Crab Cakes, followed by scallops in garlic butter and Slip Sole, brushed with vadouvan spices and lemon olive oil, perfectly preparing their palates for the main course of Wood-Fired BBQ Lobster with bang bang chilli glaze and crushed cashews. The culinary journey concluded with a sweet and indulgent Breton Butter Cake, served with bramble berries and Chantilly, providing a memorable finish to a delightful evening.
